Sweeten to taste with simple syrup. Serve over ice. Top with club soda and garnish with mint sprigs, if desired. *Simple Syrup: In a small saucepan combine 1 cup sugar and 1 cup water. Heat over medium heat just until simmering, stirring to dissolve sugar. Remove from heat. Cool. Transfer to a storage container and chill until needed or up to 2 weeks. Strained Mango Puree Seed and peel 1 fresh mango. Place the fruit in a blender or food processor. Cover and process until very smooth. Press puree through a fine mesh sieve. You should have about 3/4 cup.
