This fresh, filling salad combines fruits and vegetables with a bit of crunch to make the most satisfying lunch or dinner. While we use nectarines, feel free to substitute peaches or plums, or use a combination of stone fruit like mangoes, apricots, and cherries. Instead of combining all of the ingredients together, mix the tomatoes, nectarines, olive oil, lime juice, and salt first and then place on a bed of arugula. This will preserve the freshness of the fruit and make for a beautiful presentation. Pepitas, also known as pumpkin seeds, will add some texture to the dish. The bitterness of the arugula will pair well with the sweetness of the fruit.
